Located in the Costerie des Nimes, just inland between Montpellier and Marseille, La Patience does things very differently than most of the local producers making wine in this price realm. An all organic estate that does everything by hand, they produce bottles that succinctly capture the South of France; bright, sundrenched fruit, earthy minerality and fresh herbal and seabreeze aromas. La Patience’s origin story is a familiar one. Christophe Aguilar was the winemaker of the local cooperative for over a decade. His family was a member of the cooperative and for decades sold off their grapes. Christopher knew that his parents had some of the best plots in the area and was convinced he could make a go at bottling his own wines.Named for the wild, aromatic herb “La Patience'' that can be found throughout the vineyard, these are the same plots his grandfather worked over 50 years ago. All 60 hectares of vines are certified organic, a rarity amongst his neighbors, and all pruning and harvesting is done by hand. Picking by hand here is essential as only the healthiest ripe bunches are harvested making the wines inherently more stable thus helping them to retain their fresh Southern French charm.La Patience wines are everyday wines that never get boring. They are alive with a wild energy and filled with the plush fruit and herbaceous minerality. Easy to love and hard to put down, grab a few to stash for unexpected guests and spontaneous gatherings. Fresh, light and aromatic they are perfect on their own but like most French wines, they're also exceedingly food friendly. It's time to get your Bouillabaisse on!
