When Lilian Duplessis took over his father's domaine in Chablis, at the very northern end of Burgundy, he converted to organic farming. This sounds like the sort of generational change we see pretty often and generally love: new blood and new ideas reinvigorate established producers.But it's actually something that is relatively rare in Chablis, where the extreme climate makes chemicals very tempting. Even the most famous names (you know who...) continue to employ "conventional" farming in some measure. Working the vines this way is really hard work and takes serious commitment.So Duplessis stands out, right away. But he's taken it even further: he's one of a very few biodynamic growers in Chablis. And even among that small group of producers, Duplessis stands out for making wines that taste most "classical" in style, with clean, pure Chablis flavors that accurately reflect the different nuances of some of Chablis's finest crus. Compared to Chablis's other famous biodynamic producer, Thomas Pico, Duplessis's wines are on the reductive side and can seem a little shy at first. But their track record for short and medium-term aging is excellent.
