Vincent Dauvissat, one of Chablis’ most respected vignerons, farms Les Vaillons Premier Cru on classic Kimmeridgian limestone. The 2023 Chardonnay was hand-harvested, fermented with native yeasts, and aged in a mix of stainless steel and neutral oak, preserving precision and minerality.

This site-driven wine shows Les Vaillons’ hallmark elegance and lift. Ideal with oysters, white fish, or simply prepared poultry.

Vincent Dauvissat (and father René) have become what many consider to be the top domaine in Chablis (along with Raveneau) through very hard, meticulous work in the vineyard and the cellar. Of course it doesn't hurt that they also possess some of the best parcels within the best Premier and Grand Cru vineyards.

All their wines are fermented in tanks and spend a year settling there before being carefully transferred to oak barrels, mostly neutral, for additional aging. This adds a richness, depth and complexity to the mineral, saline characters that their terroirs produce.

"A more elegant nose is comprised by notes of white pepper, mineral reduction and more evident floral nuances along with an array of classic Chablis nuances, especially iodine and shrimp shell. This is at once slightly bigger but also a bit racier than the Séchet with excellent delineation and minerality that adds a sense of lift to the sneaky long, well-balanced and appealing dry finale. Lovely." -Allen Meadows

"Today, the 2023 Chablis Vaillons 1er Cru has quite a reductive bouquet, making it difficult to read. The palate is medium-bodied with moderate weight, a "sunny" Vaillons as you would expect and as a consequence, I don't discern the same degree of tension or mineralité as the Séchets (for example)." -Neal Martin

"Informed by deeper soil than Séchet, the 2023 Chablis 1er Cru Vaillons opens from the glass with aromas of honeysuckle, white peach, tangerine and smoke. Extroverted, full-bodied and textural, with a chalky grip and saline finish, Vaillons is more open-knit than its neighbor Séchet. However, this youthful charm can be deceitful, as, based on my experience enjoying this cuvée 10 or even 15 years after harvest, it always richly rewards patience." -Kristaps Karklins
