Perseverance and patience earned their place in this wine's name through two years of aging in neutral barrique. Melissa Bazin and Romain De Moor craft this Saint-Bris from two tiny organically farmed parcels—one planted in 1959 on marl, the other in 1990 on Kimmeridgian limestone. Hand-harvested Sauvignon Blanc undergoes spontaneous fermentation with 25% macerating on skins for 10 days while 75% is direct-pressed, creating complexity unfined and unfiltered. This is Burgundy's quiet revolution in a bottle.
