What is this wine?

Pierre-Yves Colin-Morey (PYCM) is one of Burgundy’s most respected and influential white wine producers. Based in Chassagne-Montrachet, Pierre-Yves—formerly the winemaker at his family’s Domaine Marc Colin—founded his own domaine and négociant operation in 2005. His wines are known for their precision, minerality, and restrained, reductive style, with meticulous farming and minimal intervention in the cellar.
The Bourgogne Hautes-Côtes de Beaune “Bout du Monde” 2023 comes from cool, high-altitude vineyards above Saint-Aubin and La Rochepot, planted on thin, chalky limestone soils. These sites bring freshness and energy, balancing the natural concentration of the 2023 vintage. The wine is fermented with native yeasts in 350L barrels (no new oak) and aged on the lees without bâtonnage to preserve tension and purity.

Why get this wine?

This is textbook PYCM—taut, mineral, and deeply expressive despite its humble appellation. “Bout du Monde” (“end of the world”) perfectly captures the spirit of these remote, windswept vineyards. It delivers Chassagne-like precision at a fraction of the price and is often considered one of the best value whites in the entire PYCM lineup.

What does this wine taste like?

Bright and focused, with lemon oil, green apple, white peach, and crushed stone. The palate is tense and saline, offering fine texture and a long, chalky, mineral finish.

When should you drink this wine?

Drink 2025–2032. Serve cool (not cold) with oysters, grilled fish, or roast chicken. A superb introduction to PYCM’s iconic style.

Pierre-Yves Colin-Morey became a star for all kinds of reasons.

Partly, it was because he was an early master of a style of white Burgundy that has now become very popular: less oaky (thanks in part to larger barrels), no lees-stirring, earlier picked, a bit more reductive. The aim is not to make the fat wines that were still popular when he was starting out, but rather expressive wines that were chiseled and precise. His wines do all of this so well that he persuaded the rest of us to go along for the ride.

He also became a star because of critical acclaim, and it was the right kind of critical acclaim for the moment. Way back in 2008 Jancis Robinson wrote up PYCM and headlined it: “Making Chassagne more like Riesling”, capturing the style of these wines perfectly. Only Jancis could make a star of Klaus-Peter Keller by comparing his Rieslings to white Burgundy and a star of PYCM by comparing his white Burgundies to Riesling!

But we think he also became a star for a reason that some may overlook: he has long been a champion of Burgundy’s so-called lesser terroirs, and he has been able to make from them incredible wines that can reach a larger audience.
