What is this wine?
Domaine Paul Pillot, now led by Thierry Pillot, has become one of Burgundy’s most admired estates, producing crystalline, terroir-focused whites from Chassagne-Montrachet and Saint-Aubin. Les Champs Gains is a high-elevation premier cru with thin limestone soils, giving Chardonnay of tension, precision, and mineral clarity. The 2020 vintage was warm but balanced, producing concentrated yet vibrant whites with superb aging potential.

Why get this wine?
Thierry Pillot’s wines are among the most sought-after in the Côte de Beaune, and Champs Gains is a benchmark for his taut, mineral-driven style. For collectors, it offers near–grand cru finesse at a more approachable price point, especially in a vintage as strong as 2020.

What does this wine taste like?
Lemon zest, green apple, and pear with white flowers, chalk, and a touch of hazelnut. Focused and racy, with vibrant acidity and a long, saline finish.

When should you drink this wine?
Best from 2024–2038. Decant if drinking young. Pairs beautifully with oysters, grilled fish, roast chicken, or alpine cheeses.

Thierry Pillot is killing it! He is a super-talented vigneron, and since he has taken over his family's domain the quality has gone through the roof. He is one of those rare characters who is equally good at making red and white wines.

They have 13 hectares of vines in the domaine, 1/3 red and 2/3 white. The whites are very concentrated because of the frost and the reds are supple and elegant, really classic. Like many young vignerons, Thierry has also set up a micro-negociant under his own name.
