Domaine Hubert Lignier does things the right way--their way--from farming to fermentation to élevage. They practice "sensible combat" (lutte raisonnee) in the vineyards and don't use herbicides. Their wines are organic but not certified. They don't have to be. They don't need to pay some outsider to come in and tell them what to do. They don't give a damn and the wines are proof of their greatness. Use of new oak barrels is low--up to 50% on the Grand Crus Charmes Chambertin and Clos de la Roche.

Concentrated and velvety in texture, the palate is medium-bodied with sappy black fruit and a touch of glycerin toward the finish. More primal than its peers, this will need considerable bottle-aging before it chooses to reveal its personality. "Produced from old-vine fruit from Monts Luisants giving tiny yields. Produced with about one-third whole clusters and one-third new casks for ageing, the wine opens with a complex nose showing black cherry fruit and a savoury, almost gamey edge. The initial impression on the palate is silky and accessible, but the tannin here is immense, although very fine-grained. There is impressive freshness and a finish that goes on and on. Lovely. A superb Clos de la Roche."
