Vincent Dauvissat (and father René) have become what many consider to be the top domaine in Chablis (along with Raveneau) through very hard, meticulous work in the vineyard and the cellar. Of course it doesn't hurt that they also possess some of the best parcels within the best Premier and Grand Cru vineyards.

All their wines are fermented in tanks and spend a year settling there before being carefully transferred to oak barrels, mostly neutral, for additional aging. This adds a richness, depth and complexity to the mineral, saline characters that their terroirs produce.

"The Preuses was, appropriately, quite closed when I tasted it, opening in the glass with a reticent but profound bouquet of wet stones, white flowers, iodine, oyster shell and a subtle hint of apple. On the palate, the wine is full-bodied, multidimensional and concentrated, with electric energy, a lovely sense of reserve and a deep but taut core. While minerality is an abused term, it’s hard not to invoke it to describe its supremely stony, saline texture. One of the wines of the vintage in Chablis."
