Vincent Dauvissat (and father René) have become what many consider to be the top domaine in Chablis (along with Raveneau) through very hard, meticulous work in the vineyard and the cellar. Of course it doesn't hurt that they also possess some of the best parcels within the best Premier and Grand Cru vineyards.All their wines are fermented in tanks and spend a year settling there before being carefully transferred to oak barrels, mostly neutral, for additional aging. This adds a richness, depth and complexity to the mineral, saline characters that their terroirs produce.
