Olivier Horiot, based in Les Riceys in the Aube, crafts Séve from a single parcel of Pinot Noir in the Barmont vineyard. The 2016 vintage is organically farmed, fermented with native yeasts, and aged in oak before extended lees aging in bottle. Bottled as a Blanc de Noirs with low dosage, it highlights depth, texture, and terroir expression.

Presented in magnum for slower evolution, it offers complexity and longevity. Excellent with roasted poultry, game birds, or aged cheeses.
