The taut, mineral 2021 vintage from Pillot's hilltop Grandes Ruchottes parcel. Where the rich 2019 showed concentration and tangy amplitude, the 2021 is leaner and more driving—pure Burgundy DNA from a challenging growing season. Same tiny 0.26-hectare parcel on thin, stony marly limestone at the very top of the hill. Maximum 10% new oak, natural fermentation, no bâtonnage, unfiltered.

Thierry Pillot is killing it! He is a super-talented vigneron, and since he has taken over his family's domain the quality has gone through the roof. He is one of those rare characters who is equally good at making red and white wines.

They have 13 hectares of vines in the domaine, 1/3 red and 2/3 white. The whites are very concentrated because of the frost and the reds are supple and elegant, really classic. Like many young vignerons, Thierry has also set up a micro-negociant under his own name.

The oak is neatly integrated. The palate is slightly reductive on the entry, with good depth, a little waxy in texture with a touch of hazelnut and oatmeal towards the finish. Classy.
