What is this wine?
Domaine Paul Pillot, under Thierry Pillot’s leadership, has become one of the most exciting estates in the Côte de Beaune, producing crystalline, terroir-driven whites from Chassagne-Montrachet and Saint-Aubin. Les Charmois is a premier cru vineyard at the northern end of Saint-Aubin, with limestone soils that yield precise, mineral-driven Chardonnay. The 2020 vintage was warm and sunny, producing whites of ripeness and depth balanced by fresh acidity and fine structure.

Why get this wine?
Thierry Pillot’s wines are now firmly in the “cult” category, highly allocated and admired for their finesse. His Charmois is a perfect example of Saint-Aubin’s ability to rival its pricier Puligny and Chassagne neighbors, offering premier cru pedigree at remarkable value. The 2020 bottling is both approachable in youth and cellar-worthy.

What does this wine taste like?
Citrus zest, green apple, and pear with white flowers, chalk, and a touch of hazelnut. Taut and elegant, with vibrant acidity and a long, mineral finish.

When should you drink this wine?
Best from 2023–2035. Decant if drinking young. Excellent with oysters, grilled fish, roast chicken, or alpine cheeses.

Thierry Pillot is killing it! He is a super-talented vigneron, and since he has taken over his family's domain the quality has gone through the roof. He is one of those rare characters who is equally good at making red and white wines.

They have 13 hectares of vines in the domaine, 1/3 red and 2/3 white. The whites are very concentrated because of the frost and the reds are supple and elegant, really classic. Like many young vignerons, Thierry has also set up a micro-negociant under his own name.
