What is this wine?
Domaine Paul Pillot, now led by Thierry Pillot, has become one of Burgundy’s most admired producers, crafting precise, mineral-driven Chardonnays from Chassagne-Montrachet, Saint-Aubin, and surrounding villages. Les Pitangerets is a premier cru in Saint-Aubin, lying just beneath the famed Puligny and Chassagne slopes. The 2021 vintage was marked by severe frost and low yields, but the resulting wines are outstanding—taut, pure, and terroir-expressive, with superb aging potential.

Pillot’s wines are now cult classics, offering crystalline expression of Chardonnay without heaviness. Les Pitangerets is a brilliant insider’s pick: a premier cru that rivals its Côte de Beaune neighbors at a fraction of the price. What does this wine taste like?
Citrus and green apple with pear, white flowers, and a chalky, saline backbone. Vibrant and elegant, with finely etched acidity and a long, mineral finish.

When should you drink this wine?
Best 2025–2035. Decant if drinking young. Excellent with shellfish, roast chicken, or creamy vegetable dishes.

Thierry Pillot is killing it! He is a super-talented vigneron, and since he has taken over his family's domain the quality has gone through the roof. He is one of those rare characters who is equally good at making red and white wines.

They have 13 hectares of vines in the domaine, 1/3 red and 2/3 white. The whites are very concentrated because of the frost and the reds are supple and elegant, really classic. Like many young vignerons, Thierry has also set up a micro-negociant under his own name.
