The Papillon takes flight from an old riverbed west of Mercurol, where Gilles Robin planted Syrah in 1996. Organic farming and minimal intervention yield a bright, juicy wine dense with dark cherries, cassis, and peppercorn spice. Medium-bodied with well-integrated tannins and a long, succulent finish, this Crozes-Hermitage drinks beautifully now yet holds three to four years in the cellar.
