We are thrilled to invite you to join us for an extraordinary evening with Pedro Parra—a.k.a. "Dr. Terroir"—on Monday, February 23rd, from 5 PM to 7 PM in our Cellar Room. This is an exceptionally rare chance to taste with one of the wine world's most sought-after figures during a brief visit to San Francisco.

Pedro Parra is not simply a winemaker—he is the world's leading authority on terroir as expressed through geology. After earning his PhD in terroir from the Paris Center of Agriculture, Pedro built a career consulting for some of the most prestigious names in wine: Jean-Marc Roulot in Burgundy, Louis-Michel Liger-Belair in Vosne-Romanée, Comando G in Spain's Sierra de Gredos, Marco Marengo in Barolo, and Zuccardi in Argentina, among many others. His revolutionary approach—digging deep soil pits to analyze the geological composition of micro-plots—has transformed how winemakers understand their vineyards. Where most consultants focus on topsoil, Pedro examines the rocks beneath, believing geology is the single most important component of a wine's mouthfeel and character. His ability to describe a wine's style simply by studying the ground has earned him near-legendary status in the industry.

But Pedro's most personal work happens at home in Itata, Chile, where he makes wines under his own name from some of the oldest vines in South America. After fifteen years traveling the world as a consultant, Pedro returned to his native region to champion the ancient, dry-farmed vineyards of Cinsault and País planted on 220-300 million year old granite soils. Many of these bush vines are 60 to 120 years old, survivors of an isolated terroir that time forgot—protected from industrial viticulture precisely because Itata was dismissed as a backwater for decades. Pedro saw what others overlooked: granitic terroirs that reminded him of Barolo, Morgon, and Galicia, places with deep winemaking traditions that only recently gained global recognition. His mission is not just to make wines he loves to drink, but to help the brave local farmers who protected these vines for generations against pressures to tear them out in favor of international varieties.

During this special seminar, Pedro will personally guide guests through a selection of his wines from Itata—expressions of ancient granite that showcase his theories about terroir in their purest form. These are some of the most electrifying wines being made in Chile today, proof that Dr. Terroir's decades of research translate brilliantly into the bottle. It's a rare chance to learn directly from someone who has literally dug thousands of soil pits around the world and can articulate, better than anyone, why rocks matter most.
