Daniel is a bit of a renaissance man. A teacher, musician and at first reluctant inheritor of his familyโs estate in the village of Crรฉzancy-en-Sancerre. Daniel eventually came to love his work in the vines and the cellar and passed this love on to his son Simon, who is now in charge of daily operations.
Simon has instituted a few key changes. Though farming has long been sustainable he now uses organic treatments almost exclusively (though theyโre not seeking certification). And in the cellar heโs ended the occasional practice of using commercial yeasts, opting for the native cellar and vine yeasts only. But the wines are still fermented and aged in a combination of steel tanks and large, neutral wood barrels.
