From the producer: LES BOUFFANTS is an early terroir facing south. Its limestone soil and its exposure give the wines a strong character that is both dense and voluptuous.
On the Domaine, the Bouffants terroir is split into two parts. A first part (Haut de Bouffants for 75% of the plot) is located at the top of the hillside with very stony soil but with fluid and supple earth which works extremely well. The second part (Slope of Bouffants for 25% of the plot) is a steep slope of finer and softer limestone called Griottes. Ripening is faster there with always golden grapes and a lower yield.
Like “la Côte de l’pée” for the Damoclès vintage, “les Bouffants” is one of the mythical localities of the Sancerre appellation that we wanted to isolate to highlight another facet of the diversity of our plot.
LES BOUFFANTS is a deep wine with a generous profile supported by a very clear limestone structure and beautiful bitterness.
