A 5th generation winemaker in his family, Nicolas Rossignol is a perfect example of how a newer generation of vintners in Burgundy have brought tradition and knowledge from the past into the future. To better understand vinification after his studies, he worked at various wineries you may have heard of such as Louis Latour, Vieux Telegraphe, and and Chateau Cardonne, as well as Domaine Boschendal in South Africa. He returned to Burgundy in 1994 and now produces exceptionally beautiful wines in Volnay and Pommard by balancing the elegance and power of all his different vineyards.

"Dark in colour, the cassis fruit aromas are very ripe, with an earth and mineral edge. The wine is structured and powerful, yet it never loses its essential elegance. Rossignol farms 2.1ha of Santenots de Dessous where the mother rock comes back to the surface, covered by a bit of clay. The site ripens grapes easily and Rossignol reports picking at 14.5% potential alcohol in 2020. For this wine, he destems the harvest completely, extracts the tannin and colour very gently, and then matures the wine in 20% new barrels."
