What is this wine?
Domaine Paul Pillot, now led by Thierry Pillot, is one of the most admired estates in Chassagne-Montrachet, producing precise, mineral-driven whites that rank among Burgundy’s most exciting. Les Grandes Ruchottes is a high-altitude premier cru on thin, chalky soils, known for yielding Chardonnay of energy, finesse, and longevity. The 2020 vintage in Burgundy was warm but balanced, producing whites with ripe fruit, tension, and impressive cellaring capacity.

Thierry Pillot’s wines have become cult bottlings thanks to their elegance and terroir clarity. Grandes Ruchottes is among his most distinctive crus, delivering a taut, racy style that Burgundy collectors prize. What does this wine taste like?
Citrus zest, green apple, and pear with notes of white flowers, chalk, and a touch of hazelnut. Focused and mineral, with vibrant acidity and a long, saline finish.

When should you drink this wine?
Best 2025–2038. Decant if drinking young. A natural pairing with oysters, grilled fish, roast chicken, or alpine cheeses.

Thierry Pillot is killing it! He is a super-talented vigneron, and since he has taken over his family's domain the quality has gone through the roof. He is one of those rare characters who is equally good at making red and white wines.

They have 13 hectares of vines in the domaine, 1/3 red and 2/3 white. The whites are very concentrated because of the frost and the reds are supple and elegant, really classic. Like many young vignerons, Thierry has also set up a micro-negociant under his own name.

"The 2020 Chassagne-Montrachet Les Grandes Ruchottes 1er Cru far surpasses my expectations and is one of the highlights among the flights of Chassagne-Montrachet. It has a riper nose than Pillot's own La Grande Montagne and not the same degree of delineation. That veil is stubborn and does not lift after rigorous aeration. The palate is nicely balanced with notes of lemon zest, grapefruit and a touch of spice. It's focused with satisfying energy on the finish. Perhaps it just lacks the amplitude of the best wines of the appellation, but this is one that shows significant amelioration after 15 minutes in the glass. After that, it just soars, the aromatics gaining more and more clarity. Give this time. Tasted blind at the annual Burgfest tasting." -Neal Martin
