On the island of Lanzarote, Bodegas Los Bermejos’ Ignacio Valdera has become the master interpreter of his island’s magnificent, challenging terroir. The driest and most arid of the Canaries, Lanzarote saw a period of intense volcanic activity in the 18th century which left it covered with meters of ash and lava. To reach the fertile topsoil, and protect against the whipping winds, farmers dig craters bounded by semicircular stone walls, in which individual vines are planted. Yields are incredibly low.
