Hébrart has holdings in a number of top sites in both the Vallée de la Marne and the Côte des Blancs but is a specialist in the great village of Mareuil-sur-Aÿ, where you find top spots like the Clos des Goisses and Selosse’s Sous le Mont.

When he blends his top cuvées, he has a lot of great source material to choose from but even Hébrart’s entry-level wines are pitched absolutely perfectly for Thursday. They're elegant and complex, and will elevate any dish. But they're not flashy or over the top: more supporting players than showboaters.

"One of the standouts in this range, the NV Brut Blanc de Blancs 1er Cru is a Champagne of real depth and staying power. Smoke, slate, crushed rocks, orchard fruit, lime and pear notes are all beautifully delineated in this vibrant, energetic Blanc de Blancs. Time in the glass brings out the wine's texture and broad, ample frame, along with a set of more gently oxidative aromas and flavors that suggest the Blanc de Blancs won't be a long-term ager. Even so, the Blanc de Blancs is quite pretty and expressive today. Dosage is 7 grams per liter." -Vinous
