Sébastien Mouzon is redefining Montagne de Reims terroir with his biodynamic approach, crafting some of Champagne’s most distinctive grower bottlings. Based in Verzy, his wines highlight individual parcels and expressions, with a commitment to minimal intervention. L’Incandescent is a saignée-method rosé made entirely from Pinot Noir, macerated briefly on the skins before being fermented with native yeasts and aged in neutral oak barrels. Bottled with zero dosage, it is a pure, unfiltered snapshot of both the grape and the chalky soils of Verzy.

The wine bursts with aromas of wild strawberries, blood orange, and crushed rose petals, layered with hints of spice and a signature saline minerality. On the palate, its structure is both powerful and refined, with ripe red berry flavors balanced by electric acidity and a long, chalk-driven finish. The saignée technique lends a vinous depth, making this a rosé Champagne with serious presence and complexity.

In addition to being a top Champagne vigneron, Christophe Mignon is something of a wizard, a mad scientist.

Mignon is credited — along with a few other notable Champagne vignerons (including Jérôme Prévost) — with elevating the status of Pinot Meunier, once considered a supporting player to Chardonnay or Pinot Noir's leading role. His estate is located in the Vallée de Marne, where Pinot Meunier is grown in clay and chalk soils, ideal for expressing intense fruit and precise minerality.

For the past 20 years, everything at the estate has been done with respect for the lunar calendar, as well as Christophe's unwavering respect for the earth. An inveterate tinkerer, he's designed many of his own vineyard tools, including a homeopathy machine that dispenses minute amounts of copper (as well as tinctures of valerian root and garlic), to curb the need for intrusive chemicals.
