Jean‑Marc Pastou planted these old vines in the early 1980s on a prized slope in Sury‑en‑Vaux. The parcel, La Côte de Sury, sits on high-altitude silex and limestone soils, capturing classic Sancerre tension and mineral grip.

The wine is fermented and aged in stainless steel, then bottled unfined and unfiltered. This is Pastou’s top cuvée—pure Sauvignon Blanc with structure, drive, and precision.
