Nick Mills is the heir to Rippon, the oldest winery in Central Otago, where they grow New Zealand's best Pinot Noir. He trained at, among other fine addresses, the Domaine de la Romanée-Conti. But there's no better way to learn about Central Otago's great potential than to try his wines—especially once they've been cellared for a few years.
