Schiavenza is a jewel of an estate: small, family-run and operating exclusively in the northern sector of Serralunga around the hamlet of Cerretta. They've been making wines in a traditional fashion since the 1950s, but it's only in recent years that they've achieved that extra level of refinement that leads to international attention (like being named one of Barolo's top 25 producers by Tom Hyland of Forbes). The recent changes made in their cellar are subtle yet effective. There is a gentler approach to extraction, it comes from their new, delicate hydraulic vertical basket press. And the length of aging in botte has also been reduced, coming down to around 30 months when it had previously been 36+ months. Getting the wines into bottle earlier has helped preserve the fruit for longer aging down the road.
