Vilmart & Cie has long been considered one of the finest grower-producers in Champagne, crafting wines with Burgundian elegance and depth. Laurent Champs, the fifth generation at the helm, farms his Premier Cru vineyards in Rilly-la-Montagne organically, focusing on low yields and meticulous vinification. Cœur de Cuvée is Vilmart’s flagship cuvée, made from the heart of the first press (the purest juice), blending 80% Chardonnay and 20% Pinot Noir. Fermented and aged entirely in oak barrels, this Champagne forgoes malolactic fermentation to preserve its tension and longevity.

The 2016 vintage delivers remarkable precision, opening with aromas of citrus blossom, pear, and toasted hazelnuts, underpinned by delicate spice and a signature chalky minerality. The palate is layered and complex, with flavors of lemon curd, baked apple, and a touch of vanilla, all framed by a firm, structured backbone. Fine, persistent bubbles carry the wine to a long, mineral-driven finish that balances power with finesse.

A Champagne of profound depth and elegance, Cœur de Cuvée is a natural match for butter-poached lobster, roasted poultry with truffle, or aged Comté. With its balance of richness and precision, this is a wine that can be enjoyed now but will reward patient cellaring for a decade or more.

Vilmart is on the Burgundian end of the Champagne spectrum. Older examples of his top wines come to taste a lot like a mature Chevalier-Montrachet with fermentation and aging in barrels. But unlike a true C-M Vilmart blocks the malos, retaining great mineral tension. Aside from their rosé, the wines are dominated by Chardonnay—and not the pencil-lead Chardonnay of the Côte des Blancs, but the more generous Chard that you get on the Montagne de Reims where the black grapes tend to be more dominant.

More important than these ""technical"" details, Vilmart is obsessed with good vineyard work, has plenty of low-yielding older vines, and happens to make really delicious wines. Taste and you will learn. And if you have already learned, you will almost certainly want to taste some more!

"The 2016 Brut Coeur de Cuvee is an elegant, sensual Champagne. In other words, classic Vilmart. Crushed flowers, mint, chalk, slate, dried herbs and citrus peel are all beautifully delineated. Brisk acids wrap it all together in style. The 2016 needs a few years to be at its most expressive, as it is pretty reserved today. Even so, all the elements are impeccably put together. "The 2016 Brut Premier Cru Coeur de Cuvée is derived from vines planted in the Hauts de Blanches Voies lieu-dit on chalky soils. Evoking aromas of pear, spices, white flowers, spring blossoms and lemon oil, it's full-bodied, sappy and round, with a deep core of fruit, bright acids and a long, ethereal, chalky finish. Slightly phenolic and with a pinpoint mousse, this blend of 80% Chardonnay and 20% Pinot Noir was matured for five years in the bottle on the lees and released two years after disgorgement. This is simply gorgeous."
