Ephémérè: Savart's New Champagne Project Part Deux
Fred Savart makes some of the most vibrant and vivacious Champagne. He is a favorite at Flatiron and we clamor to get as much of his wine as possible. The crux is that he produces a mere 2500 cases a year which in Champagne standards is as micro-production as it gets. Considering he has rabid fans all over the globe we are happy we get the tiny amount we do.
So when we heard that he was working on a new project we jumped at the chance to grab as much as we could. Champagne Éphémère was launched in 2014 as a collaboration between Fred Savart and a few longtime friends. We bought these on reputation alone, something we rarely do. So when they arrived we cracked one open and were delighted to taste a wine that is signature Savart.
Éphémère 017 Blanc de Noirs is 100% Pinot Noir from the neighboring Grand Cru Villages of Bouzy and Ambonnay. These are 2 of the most esteemed villages for Pinot in the Montagne de Reims, and when combined with Fred’s talent and prowess the results are impressive, to say the least. The base vintage is 2018 and it spent 3 years aging on the lees before bottling.
The result is a richly textured but surprisingly elegant and lifted Blanc de Noirs. Essentially the pure magic of Fred in a bottle. We are so happy to have this to drink while we wait for the next tiny allocation from Champagne Savart. We offered the rosé from this exciting new (ish) project a few weeks ago and it sold out w/in 24 hours so don't hesitate to grab this right away!
