Pinot Noir from the hillsides above the Côte de Nuits—where Burgundy's most famous vineyards live. Domaine Cornu-Camus (est. 1981, next generation) is based in the tiny village of Echevronne in the Hautes-Côtes de Beaune, farming 12 hectares organically across 15 appellations. The Hautes-Côtes sits at higher elevation with cooler temperatures, producing leaner, more mineral Pinot Noir. Savory, earthy, and honest—a style that rewards food pairing more than contemplation.

Left Burgundy

Cornu-Camus is an old-school producer who lives and mostly works in Hautes-Côtes' hills above Beaune, although they do have a smattering of holdings in the Côte d’Or, including two parcels of village level Pinot Noir in Pernand. Like so many producers these days, a new generation has made huge improvements (better farming, lower yields, more hands-off wine-making).
