Fiano is a temperamental grape to grow, notorious for very low yields. You’re not going to get rich growing Fiano, and for that reason, many old vines were ripped up in the 19th and 20th centuries, in favor of the higher-yielding Trebbiano or Sangiovese.We’ve relied on traditionally-minded growers like I Favati to keep the magic alive.
