Alice et Olivier de Moor Bourgogne Aligote Plantation 1902 2023

This is the parcel that got Alice and Olivier de Moor to quit their day jobs: just over half a hectare of Aligoté in Saint-Bris, planted in 1902, which they leased in 1994 and now farm organically. No one makes more Aligoté cuvées than the de Moors, and this old-vine bottling makes the strongest case that Burgundy's supposed second-string white grape deserves to be taken seriously. The 2023 was hand-harvested, destemmed, gently pressed and fermented with native yeasts. It then spent two years on its lees with no bâtonnage or racking, first a year in 500-liter demi-muid and then a year in foudre. It was bottled unfiltered with only a small touch of sulfur, in keeping with the de Moors' hands-off style. They don't make it every vintage, and when they do there isn't much of it, so grab it while it's here.

More about

When Alice and Olivier met in Chablis in the late '80s the wine world was very different. Chablis, like much of France, was churning out industrial wine that was drinkable but rarely interesting or unique. Farming was chemically enhanced, with the purveying philosophy of throw whatever you want into the vineyard.

The De Moors went in a completely different direction when the planted their first vineyard in 1989. They farmed organically, eschewing chemicals of any kind, and worked with a deft, light touch in the cellar in order to allow their special terroir to shine through.

30 years later they are now a well established, top tier producer in the world of natural wine and beyond. While much of Chablis is still produced with an industrial bent, there are now dozens of producers who farm organically and aim to produce interesting, terroir driven wines. The De Moors can certainly take some credit for helping to start this renaissance.

Tasting Notes & Food Pairings

Perfect Pairings

Oysters on the half shell, warm gougères, jambon persillé, roast chicken with lemon and herbs, or a fresh Chavignol-style goat cheese.

Tasting Profile

Expect old-vine Aligoté at its most serious: lemon, green apple and white flowers with a chalky, saline edge. Two years on the lees in large oak typically adds texture and subtle nutty depth rather than overt wood, while the grape's bright acidity keeps it taut. Think a racier cousin of Chablis, finishing dry and long.
