Aligoté made in Henri Jayer's own cellar — a sentence that would have sounded impossible a few years ago. Guillaume Rouget, Jayer's great-nephew and the winemaker at Domaine Emmanuel Rouget since 2009, launched Les Petits Lieux in 2023 with the oenologist Laure Guilloteau, reopening Jayer's historic cellar in Vosne-Romanée and putting his restored original equipment back to work. Burgundy's other white grape has been rescued from decades of neglect, and it suits the house approach here: organic farming, indigenous-yeast fermentation, and whites given a longer, unhurried élevage than the reds with very little new oak in sight. 2024 was a small and hard-won Burgundy vintage that rewarded growers who sorted ruthlessly; the wines that came through are taut and high-toned, which is exactly what you want from Aligoté. Serve it properly cold, and don't be surprised if it holds its own against the Chardonnay you open next to it.

More about Les Petits Lieux

Les Petits Lieux is the new project of Guillaume Rouget, son of Emmanuel Rouget, the nephew who inherited Henri Jayer's vineyards, and his wife Laure Guilloteau. They bought Jayer's old house and cellar in Vosne-Romanée, which had sat unused for about twenty years with his equipment still in place, and make the wines there. With no vineyards of their own yet, they buy grapes from carefully chosen sites, from Marsannay to Saint-Romain, and use little or no new oak. Bright, fresh and rooted in tradition.

Tasting Notes & Food Pairings

Perfect Pairings

The classic call is oysters with mignonette, or a plate of jambon persillé. It also handles gougères, fried smelts, fresh goat cheese and a bowl of mussels in white wine.

Tasting Profile

Bright lemon and green apple with a chalky, faintly saline edge. Light-bodied and dry, with the firm, mouthwatering acidity Aligoté is known for. The finish is clean and brisk rather than showy — refreshment first.
