This is high-altitude Austrian Sauvignon Blanc from some of the steepest, highest vineyards in Central Europe: red slate slopes at 420 to 580 meters in Kitzeck-Sausal. The Schauer family calls it their signature wine. If you think of Sauvignon as tank-fermented and zippy, this one takes the slower road. It ferments on wild yeast only in large used wooden barrels and skips malolactic fermentation, then spends a full year on its fine lees. The vines face south and southwest, so they get plenty of sun, while cool alpine air from the north and west brings very cool nights. That combination of ripeness and freshness is exactly what the wine is built on. Kitzeck-Sausal is one of five village-level (Ortswein) appellations within Südsteiermark, and only Sauvignon Blanc and Riesling may carry the name. Stefan Schauer makes the wine. He and his brother Bernhard took over from their father Karl in 2010, and they still help out at their parents' Buschenschank, a traditional Austrian wine tavern. For anyone who loves the stony, serious side of Sauvignon, this is a detour well worth taking.

Tasting Notes & Food Pairings

Perfect Pairings

Pan-fried trout with brown butter and almonds; Styrian salad of roasted squash and greens dressed with pumpkin seed oil; white asparagus with hollandaise; Wiener schnitzel with potato-cucumber salad; warm goat cheese tart with herbs.

Tasting Profile

Expect a stony, serious take on Sauvignon Blanc: citrus, gooseberry and white peach with herbal notes and a smoky, slate-driven minerality. Large used barrels and a year on the lees typically add texture and a rounder mid-palate without obvious oak, while skipping malolactic keeps the acidity bright. Think a richer, more mineral Sancerre, finishing dry and long.
