Raúl Perez is like Spain’s wine fairy godmother — he’s influenced, mentored or worked alongside scores of winemakers, imparting his hands-off philosophy and respect for terroir along the way. So when he received word of an ancient and unique vineyard called Piedras Machadas in the Gredos mountains, he raced there. 2019 was the inaugural vintage, and only about 800 bottles of each were produced. Naturally, the farming is organic (though not yet certified) and by hand.
