Every year Nathalie Vignier picks just one lieu-dit from her Cramant holdings, the one she feels best captures the village and the vintage, and bottles it alone as Pur Cramant. For 2016 she chose Les Fourches, a northeast-facing site in the south of Cramant near the well-known Bateau vineyard, where vines more than 55 years old grow in clayey marl over a subsoil of pure chalk. She fermented it in stainless steel and kept it on its lees until bottling the following April. It then aged more than five years in bottle before disgorgement. The Extra Brut dosage is just 4.3 g/L, so the site and all that time on the lees have nothing to hide behind. Nathalie is the tenth generation of her family to make wine in Champagne and the sixth in Cramant. Her grandfather Paul LeBrun was among the first in the Côte des Blancs to break away from the big houses and go independent after World War I. One village, one site, one year: this is grower Champagne doing exactly what it should.

More about

Nathalie Vignier's family has grown Chardonnay in the grand cru of Cramant since the 1860s, and in 2014 she came home to run the estate with her brother Jean. Alongside Cramant parcels like Les Fourches and Chenelots, the family farms vines in the Côte de Sézanne planted by her grandparents, home to the single-parcel Silexus Sezannensis from flint and sand over chalk. Farming is certified sustainable, and the wines see long stretches in bottle, often seven years or more, before release.

Tasting Notes & Food Pairings

Perfect Pairings

Raw oysters or langoustines with lemon, sole meunière, scallop crudo with sea salt, gougères, or a wedge of aged Comté.

Tasting Profile

Expect the classic Cramant Blanc de Blancs profile: lemon, green apple and white flowers over a pronounced chalky minerality, with long ageing on the lees adding brioche and toasted almond. Steel fermentation and a very low Extra Brut dosage keep it taut and precise, with a fine, creamy mousse, bright acidity and a very dry, saline finish.
