Raveneau is the name Chablis lovers say in a hushed voice, and Butteaux is the premier cru from this house that asks for patience and pays it back. The parcel sits among the domaine's highest, on shallow marly limestone over blue clay. It faces south and east, which brings ripeness, and the wind that sweeps the slope keeps it fresh. That pull between ripeness and freshness is what we love about this house: strength without heaviness. The domaine dates to 1948, when François Raveneau combined his holdings with his wife's family vineyards. His sons Bernard and Jean-Marie now run the estate, with Bernard's daughter Isabelle alongside them, and the farming remains traditional. The whole domaine makes only about 3,000 cases a year across three grand crus and six premier crus, so there's never much to go around. Put this one in the cellar and give it time.

Tasting Notes & Food Pairings

Perfect Pairings

Oysters on the half shell; sole meunière; seared scallops with beurre blanc; roast chicken with morels and cream; a wedge of aged Comté.

Tasting Profile

Expect the classic premier cru Chablis profile, delivered with Raveneau's trademark flint and tension: lemon, green apple and white flowers over a stony, oyster-shell minerality. The south- and east-facing slope typically adds a riper, rounder core, while bright acidity keeps it taut, finishing dry, long and saline. Usually tight in youth, it's built to reward cellaring.
