A half-hectare of Burgundian Pinot Noir at the bottom of a Champagne slope, bottled with zero dosage: this is Blanc de Noirs built for the dinner table rather than the toast. Benoît Déhu is an eighth-generation grower. In 2009 he came home to his family's estate in Fossoy, on the western edge of the Vallée de la Marne, after a formative stint at Bollinger. L'Orme is 0.55 hectares below his La Rue des Noyers parcel, grown from a massale selection of Burgundy vine material on a spot once planted with elm trees (orme in French, hence the name). L'Orme is fermented and aged in barrel, mostly from oak grown in the family's own forest nearby. None of Déhu's Champagnes go through malolactic fermentation and none get any added sugar, and all four hectares are certified organic and biodynamic. This bottling is from a 2019 base. With nothing to soften the edges, expect the intense, high-tension style the house is known for, and pour it into a proper wine glass instead of a flute.

"The 2019 Brut Nature Blanc de Noirs L'Orme, Dehu's 100% Pinot Noir, is quite the extrovert in this vintage. A rush of red-toned fruit, spice, crushed flowers, mint and tangerine peel makes a strong opening statement. Bold and effusive, the 2019 is long on personality. Time in the glass brings out the wilder, gamier side of Pinot Noir to round things out." —Antonio Galloni

More about

Benoit Dehu has made a name for himself producing Blanc de Noirs Champagnes in the single parcel, single vintage, single grape (for the most part) style that has become popular among the best Grower Champagnes. His wines are resonant and powerful with a distinctly vinous style that merits a place on the dinner table.

Dehu learned to master red grapes working for Bollinger, Champagne's Queen of Pinot Noir. On his own, Benoit Dehu became a Pinot Meunier specialist, working his family's vineyards on the western edge of the Vallée de la Marne.

Starting in 2011, he started bottling wines under his own name from a single parcel called La Rue des Noyers -- 100% Pinot Meunier, farmed biodynamically, and ploughed mostly by horse. In 2015, he started blending some of this Meunier with Pinot Noir from a nearby plot, and calls it Initiation. He also makes an Initiation Rosé, a 75/25 Meunier/Pinot Noir blend. All wines are aged in barrels made from oak growing in a nearby forest. Dosages are very low or non-existent.

Tasting Notes & Food Pairings

Perfect Pairings

Roast chicken with morels or chanterelles; seared duck breast; wild mushroom risotto; gougères and aged Comté; pork tenderloin with a mustard cream sauce.

Tasting Profile

Expect a vinous, food-friendly Blanc de Noirs: red apple, pear and a hint of red berry from the Pinot Noir, with subtle spice and toasty depth from barrel fermentation. With no malolactic and zero dosage, the acidity typically runs high and the fine bubbles feel taut and mineral, leading to a bone-dry, saline, lingering finish.
