Domaine Robert Ampeau has one of the strangest business models in Burgundy: they won't sell you a wine until they think it's ready. The family keeps six cellars in and around Meursault. Savigny Villages has been part of that system for a long time. Back in 1982 it was on the domaine's sales list, and the vintages for sale then ran from 1964 to 1976. Ampeau's village Savigny comes from a single climat, Aux Fourneaux, at 240 metres on the lower, east-facing part of the slope, just below the stretch classified Premier Cru. The vines came into the family from Michel Ampeau's mother's side in the 1940s. The house style for reds is old-school Côte de Beaune. If you've been curious about mature red Burgundy, a 2001 village Pinot from a family that built its whole business around waiting is a very good place to start.

More about

Restaurateurs throughout the world rely on Michel Ampeau for perfectly aged, ready to drink red and white Burgundies. He releases his wines after decades of aging in their very cold cellars in Meursault. When he thinks the wines are ready for release, the bottles are inspected, cleaned up and labelled. Many of these wines have twenty years of bottle age.

No other domaine has this business model. It is amazing that they do this. The wines are old fashioned, so is the farming and winemaking. Ground cover grows between the vines to limit their consumption of water. Ampeau was one of the first growers to do this. They are not afraid of innovation.

At harvest all of the grapes are destemmed and fermented in concrete cuves, then aged in used oak barriques for 10 months. Rarely is any new oak used. The wines are bottled the year after harvest, then lie dormant in the cellars for decades. After tasting, the wines are determined ready to drink and offered for sale. The chefs and sommeliers rejoice!

Tasting Notes & Food Pairings

Perfect Pairings

Roast duck, coq au vin, a wild mushroom tart, or soft washed-rind cheeses like Époisses.

Tasting Profile

Expect the classic Savigny-lès-Beaune profile: red cherry and raspberry fruit with earthy, lightly spicy notes, a light-to-medium body, fresh acidity and fine tannins. Ampeau holds its old-school reds back until it thinks they're ready, so typically the fruit has softened toward dried cherry, forest floor and mushroom, with a savoury, dry finish.
