This is what sherry country's great grape tastes like when nobody turns it into sherry: Palomino Fino from Sanlúcar de Barrameda, made as a still, dry, unfortified white with no flor and no sherry-cask aging. Muchada-Léclapart call Lumière their "lighthouse." It comes from their best plot, La Platera, 1.6 hectares on a gentle west-facing hill in Pago Miraflores. The Atlantic cools these vines, and the chalky albariza "tosca" mother rock sits two meters below the surface. The vines are a massal selection planted in 1965 and have been farmed biodynamically since 2017 (horses do the plowing in Miraflores). The team is Sanlúcar native Alejandro Muchada and Champagne grower David Léclapart: Alejandro travelled France learning organic viticulture and ended up interning with David, and the two founded the estate together in 2016. Their approach is to stay out of the way, with spontaneous fermentation, 11 months on the full lees, about a tenth of the usual sulphur and no filtration. With only 3,000–4,000 bottles of Lumière in a typical year, it's a rare chance to taste Jerez terroir without the sherry in between.

"The 2023 Lumière is the top of the range, and it showcases the finesse and balance of their plot of old vines in La Platera in Miraflores Baja. It's planted with an old massal selection on tosca albariza soils. The grapes from the La Platera plot planted in 1960 were picked in mid-August with 12.5% alcohol, 1% more than in 2022, a 3.57 pH and 3.49 grams of acidity. It fermented with indigenous yeasts in used 225-liter French oak barrels (the barrels are from 2013; they bought them in 2017 and have used them ever since), then the wine was kept in tank with full lees for 11 months. It has a bright golden color, a very spicy nose, with a note of clove that is recurrent in many wines, dried flowers, tangerine peel and a salty twist. This wine is the sharpest expression even in a warmer and more concentrated year, a subtle and elegant wine. They don't like to harvest early; they want to pick the grapes at good maturity, to wait for the flavors and aromas to develop in the grapes. This is the more pungent expression of the grape. It was bottled unfiltered in July 2024. A total of 3,760 bottles and 200 magnums were produced." —Luis Gutiérrez

Tasting Notes & Food Pairings

Perfect Pairings

Langostinos de Sanlúcar a la plancha; pescaíto frito (Andalusian fried fish) with lemon; raw oysters; salt-baked sea bass; jamón ibérico with Marcona almonds; clams in salsa verde.

Tasting Profile

Expect delicate floral and green-apple aromas, a saline, chalky edge and a hint of struck-match reduction. Palomino is naturally gentle in acidity, so freshness typically comes from salinity, while long lees ageing adds a rounded, lightly creamy texture. Think the sea-spray tang of a fino sherry without the flor character, finishing dry, savoury and clean.
