This is dry Basque cider from a house that has been doing it for nearly a century, and it's the bottle to reach for if you want the real cider-house experience at home. Begiristain works out of the Iturrioz farmhouse in Ikaztegieta, between the Tolosaldea and Goierri districts in the heart of Gipuzkoa. The farmhouse dates to the 16th century and is one of the five oldest in the area. It didn't start out making cider. Its main work was livestock and vegetables, and the old cattle troughs are still kept in the dining room. Jose Gregorio Begiristain was the first to make Iturrioz cider for sale, and by 1932 he was producing more than 100,000 litres a year. That's a working farmhouse turned serious cider house, and a lot of history for a bottle this easy to open and share.

Tasting Notes & Food Pairings

Perfect Pairings

The classic Basque cider-house menu: salt cod omelette, fried bacalao with green peppers, and grilled bone-in txuleta steak, finished with Idiazabal cheese, quince paste and walnuts. Also good with chorizo cooked in cider, or pintxos like anchovies and guindilla peppers.

Tasting Profile

Expect the classic Basque sidra natural profile: tart green apple and sharp cider apple, a little lemon peel and a gently funky, farmyard edge. It's light-bodied and essentially still, with bracing, mouth-watering acidity (it's traditionally poured from height to liven it up), and it finishes dry, crisp and sour. Think closer to a sour beer than a sweet commercial cider.
