Sauvignon Blanc from Burgundy, grown by a couple who work their vines themselves, including a 1959 plot so virus-weakened it barely gives any fruit. Mélissa Bazin's Saint-Bris comes from two tiny organic plots. One was planted in 1959 on north-facing white clay, where court-noué (fanleaf virus) keeps yields very low. The other is a west-facing parcel planted around 1990 on Kimmeridgian limestone. The name, Persévérance et Patience, refers to the long time the wine spends in the cellar. Mélissa founded La Petite Empreinte ("the little footprint") in 2020. She started by renting plots through a program that helps young growers find land, then bought the vines in 2022. She does the pruning and hand work, and her husband Romain De Moor drives the tractor. Like Romain's parents, Alice and Olivier De Moor in Chablis, they plant fruit trees among the vines to break up the monoculture. It's a small-scale, hands-on bottle from a young estate, and a good reason to rethink what Sauvignon can be.

Tasting Notes & Food Pairings

Perfect Pairings

Crottin de Chavignol or other aged goat cheese; gougères; trout with brown butter and almonds; roast chicken with tarragon cream; seared scallops with leeks.

Tasting Profile

Expect Sauvignon Blanc in a cooler, more mineral key than most: citrus, green apple, a touch of gooseberry and fresh herbs, with the chalky, saline edge that Kimmeridgian limestone brings. Think Sancerre with a Chablis accent. It's typically light to medium-bodied with bright, tense acidity, and long cellar ageing adds a little texture before a dry, stony finish.
