Bernard Defaix Chablis Grand Cru Bougros 2024

Bougros is the Chablis Grand Cru that doesn't make you wait. It's a steep, mostly south-facing slope at the far western end of the seven grands crus, and its richer soil gives plumper wines that are friendlier when young. The 2024 adds something of its own: Sylvain and Didier Defaix call it one of the most challenging vintages in recent memory. Extreme rain and heavy mildew left them with their smallest harvest in 30 years. The grapes that survived ripened in a warm, dry August, and the brothers picked over 15 days so each sector came in at its best. They say the low yields gave the wines density and refinement in the cellar, and they point to moderate alcohol. That's a hard year to farm organically, which they've done since 2009 (with some biodynamic preparations on top) from their base in Milly on the Left Bank. Their Bougros comes from vines at the top of the slope, which get excellent sun. Their usual approach with this cuvée is barrel fermentation and ageing with regular lees stirring, in a cellar cold enough that tartrates drop out on their own over the winter.

Tasting Notes & Food Pairings

Perfect Pairings

Steamed turbot with asparagus (the domaine's own suggestion), butter-poached lobster, scallops seared in brown butter, roast chicken with morels and cream, or gougères with aged Comté.

Tasting Profile

Expect the plumper, more generous side of Chablis Grand Cru: ripe lemon, yellow apple and pear over a chalky, oyster-shell minerality. Barrel fermentation and lees stirring typically add a creamy, rounded texture and a subtle nutty note, while bright Chablis acidity keeps it taut through a long, saline, dry finish. Think white Burgundy richness with Chablis precision.
