J. Vignier Champagne Blanc de Blancs Brut Aux Origines NV ['17 Base]

$6499
Use code 10OFF to get 10% off 12+ bottles
A grower Blanc de Blancs that spends a full 36 months on its lees before disgorgement, which is the kind of patience you usually pay a lot more for. It's 100% Chardonnay from a single sustainably certified vineyard, Les Simarts, in the Côte de Sézanne, a corner of Champagne that gets far less attention than it deserves. It's fermented in stainless steel with full malolactic conversion and finished with a low dosage, so the long lees aging gives it depth and the light dosage keeps it crisp and salty. Nathalie Vignier is the tenth generation of her family to farm vines in Champagne and the sixth in the Grand Cru village of Cramant. She took a roundabout route there: she worked as an insurance adjuster for wineries in Burgundy and Champagne until her father called her home to take over. This is the 2017-base release, and it's a serious, characterful Champagne that doesn't ask you to spend Grand Cru money.

More about

Natalie Vignier is the 10th generation of her family to make wine from grand cru parcels in Cramant, Chouilly and Oiry, the literal heart of the most famous Chardonnay terroirs — not exactly "out of the way".

She wanted to push the farming towards organics but her parents were, at first, quite resistant. So Natalie, along with her husband Hubert Soreau (of Le Clos l’Abbé) and their close friend Sebastian Nickel decided to begin implementing their progressive viticultural vision on a couple of small parcels down in the Côte de Sézanne. Here, they could do as they pleased, without the pressure and attention that comes with working historically famous grand crus.

They experimented with cover crops, gentler plowing, and holistic vine treatments. And the results were almost immediate. The vineyards are bursting with life, and the fruit they produce transforms into wines of real cut and drive. Today, Natalie uses organic techniques throughout the family’s holdings but it was in the Sézanne where she battle tested her theories.

Tasting Notes & Food Pairings

Perfect Pairings

Raw oysters with mignonette, gougères, lobster rolls, buttermilk fried chicken, salmon or yellowtail sashimi, aged Comté.

Tasting Profile

Expect the classic grower Blanc de Blancs profile: lemon, green apple and white flowers, with toasty, brioche-like notes from long ageing on its lees. It's typically medium-bodied with a fine, creamy mousse, and Sézanne Chardonnay tends to be a touch riper and rounder. The low dosage keeps it crisp, with bright acidity and a dry, salty finish.
