If you wanted to start your own wine domaine in France but had no land inheritance where would you go? Burgundy, Bordeaux, the Northern Rhone all sound great except most of the top terroirs are spoken for and prices are sky high! Instead maybe you would look south, to where the climate is lovely, the land is relatively affordable and the scenery is beautiful.
That is precisely what Delphine Rousseau and Julien Zernott did a little over 15 years ago. They found a rugged estate high in the hills of the Languedoc that needed a lot of work. And work they did, converting the old (50 plus years!) head-trained bush vines to biodynamic farming and using a neighbors facility while the built their own cellar.
The high elevation vineyards, planted to mostly Carignan, Grenache and Cinsault, are perfectly situated to take advantage of warm, sunny days and cool, windy nights. This combination is perfect for making wines of elegance and balance.
