What started out as a bet between a father and son has ended up with another incredible addition to the TB portfolio. After years of begging his father to move to organics from conventional (chemical) farming Pascal Ponson gave his son Maxime a 1/2 a hectare of vines to farm as he wished. The agreement was, if there was no fruit left on the "organic" vines at harvest, Maxime couldn't come begging for some to make his own wines. But if there was fruit, then Pascal had to consider incorporating these new-fangled methods.
As you might have guessed Maxime won, but it was a dream quickly dampened by the sudden, untimely passing of his 59 year old father. Today Maxime not only farms with out chemicals, he tries to avoid all inputs, even preventative ones, only spraying even organic compounds if there is a noticeable need. This means berries are lost and a rigorous sorting is required in some vintages, but the vines have found themselves heartier than expected and fruit quality is very high.
Wines from Ponson are now riper than most in the region, like those those of his neighbor Savart, but even with slightly less acidity, the concentration and structure bring balance, harmony and depth to the bottles.
