Prosecco has become the go-to value sparkling wine for shrewd consumers. Along with the dramatically improved Cavas from northeast Spain, Prosecco has seen a significant increase in sales. There is little reason not to like them as they are light-bodied and crisp, although not as complex or profound as a great Champagne. Restaurants should take note as they are ideal for consumers who might want a glass or two of a good sparkler before settling on something more substantial.
