If you want the premier cru that sets the bar for Chablis, this is it: Raveneau's Montée de Tonnerre, which we'd call the house's top wine below grand cru level. Our case for the vineyard as Chablis's greatest 1er Cru starts with the ground. Its slopes face south and southwest over shallow Kimmeridgian limestone run through with veins of blue clay, and the Raveneau holding there comes to about 2.5 hectares of vines averaging around 50 years old. François Raveneau put the domaine together in 1948 from his own vines and parcels from his wife's family, and he also bought back prime plots his father had sold. He went on to pioneer barrel fermentation and long lees contact in Chablis. His sons Bernard and Jean-Marie have stuck to his philosophy, and Bernard's daughter Isabelle has now joined them. The whole domaine makes only about 3,000 cases a year, almost all of it grand and premier cru, so this dry Chardonnay is worth grabbing when you see it.

Tasting Notes & Food Pairings

Perfect Pairings

Raw oysters or langoustines; sole meunière; gougères; roast chicken with morels and cream; scallops seared in brown butter; aged Comté.

Tasting Profile

Expect the classic Montée de Tonnerre profile: lemon, green apple and white flowers over a pronounced chalky, oyster-shell minerality from the Kimmeridgian limestone. Barrel fermentation and long lees contact typically add a subtle creamy texture without obvious oak, giving medium body, taut acidity and a long, saline, dry finish. Think the depth of fine white Burgundy with Chablis's cut.
