2016 is the vintage where years of small, patient changes in the Dagueneau vineyards and cellar finally came together, giving a Silex with real aromatic ripeness but without high alcohol. Here it comes in magnum, which suits a wine this tightly built. Silex is French for flint, and the cuvée is named for the flint soils around Saint-Andelain, the village where the family is based. It comes from the estate's oldest, lowest-yielding vines, on the ground with the most flint. Didier Dagueneau died in 2008 when his ultralight plane crashed near Cognac. The domaine farms Pouilly like a Burgundy Grand Cru: yields held to half or three-quarters of what his neighbours harvested, and soils worked by hand and sometimes by horse. Benjamin Dagueneau's more recent changes are what brought this vintage into focus. On release the 2016 was the most closed-up wine in the range, as Silex usually is: very high acidity and huge mineral concentration, with the fruit and the complexity from barrel waiting their turn. Treat it like serious white Burgundy and open it for people who'll pay attention.

Tasting Notes & Food Pairings

Perfect Pairings

Turbot or halibut with beurre blanc; seared scallops; butter-poached lobster; roast chicken with morels and cream; aged Crottin de Chavignol.

Tasting Profile

Expect Pouilly-Fumé at its most concentrated: citrus, white peach and gooseberry over a pronounced flinty, smoky minerality, with low-toast barrels adding texture rather than obvious oak. Typically tightly wound when young, with very high acidity and a dense palate that opens slowly to a long, dry, stony finish. Think serious white Burgundy more than everyday Sauvignon.
