2019 is the vintage where years of patient changes in Dagueneau's vineyards and cellar finally paid off: aromatic ripeness without high alcohol. This is the domaine's flagship Silex from that year, in magnum. Silex is French for flint, which is the soil this Sauvignon Blanc grows in, and Didier Dagueneau added it to his lineup in 1985, just three years after launching his label with a single 1.2-hectare parcel. Louis-Benjamin Dagueneau, the fifth generation, now runs the domaine with the kind of fussiness few estates can match. Yields are kept low, and the domaine works with top coopers on very low-toast barrels in unusual shapes, including long, slim "cigars." The 2019 is estate-grown, dry-farmed and hand-picked, then fermented and aged in barrel, large formats included. One thing to know about the label: the domaine bottled it as Vin de France, not Pouilly-Fumé. On release this was the most closed wine in the range, all structure and promise, so the magnum is the right call. Treat it like great white Burgundy and give it time.

Antonio Galloni

"The 2019 Pouilly Fumé Silex shows an initial tenderness, sitting quietly and not shouting that it's made it into your glass. This is a wine that has its act together, feeling integrated and balanced with plentiful concentration and a savory long finish. A delicate dill note, which is a characteristic of oaked Sauvignon peeks out amid the hush." —Rebecca Gibb MW

Tasting Notes & Food Pairings

Perfect Pairings

Turbot or Dover sole in beurre blanc; scallops seared in brown butter; lobster with a light sauce; aged Crottin de Chavignol goat cheese; roast chicken with morels and cream.

Tasting Profile

Dry Sauvignon Blanc that is still tight and closed in its youth. Ripe and aromatic but not high in alcohol, with plenty of fruit under an intense mineral, flinty core. The acidity is big and keeps everything taut. It is all structure and potential right now and needs years to open up.
