Saignee is the harder way to make pink Champagne: rather than blending in a little red wine, you bleed off juice that has soaked on Pinot Noir skins, which brings more color, more grip and far less margin for error. Bouvet's comes from Les Pautes, a plot in the premier cru village of Bisseuil planted in 1964, farmed organically, and it is finished extra brut so nothing gets smoothed over. He is a grower working tiny volumes in the Vallee de la Marne, and this is the most characterful bottle in his range — deeply colored, structured, closer to a red wine with bubbles than to an aperitif pink. Give it a proper glass and a few minutes out of the fridge before pouring.

Returns & Exchanges

We stand behind every bottle we sell.

  • If the wine is less than 10 years old and it is corked, you may return it to us for a full refund or exchange within 60 days of purchase. You must show us proof of purchase. We understand that you may not live near a shop and that it is difficult to ship open bottles of wine to us, so if there's any problem feel free to Contact Us and we'll work it out.
  • For wines older than 10 years, the consumer bears the risk of a faulty cork, but we accept returns of older bottles if the wine is faulty as a result of improper storage. Please come by the store or Contact Us if there is a problem.
  • We may, at our discretion and to the extent permitted by law, accept returns of unopened wines within 30 days of purchase if they were properly stored by the purchaser, subject to a 15% re-stocking fee.

More about Antoine Bouvet

Antoine Bouvet’s grandfather, working some of the finest terroir in Champagne (mostly in Mareuil-sur-Aÿ, home to Clos des Goisses) produced high quality grapes, but then sold them all to Bollinger.

Antoine took over the vines around ten years ago -- and those vines are now very old -- and he changed everything. He introduced organics and biodynamics. He kept the grapes for his own family domaine and started making wine — with traditional wood cask aging, just like at Bollinger, but with all the meticulous attention to detail that is impossible at a larger operation (Antoine’s is only five hectares and he does almost everything himself!)

Tasting Profile

Ripe strawberry, raspberry and blood orange with a savory, almost earthy edge. Fuller-bodied than most pink Champagne, with real texture from the skin contact and a long, dry finish.
