A complex Piedmontese vermouth built on more than thirty botanicals, many of them foraged by hand in the Occitan Alps above the distillery. Bordiga has been working in Cuneo since 1888, still using founder Pietro Bordiga's recipes and an original copper pot still; every botanical is macerated separately in alcohol so each one gives up exactly what it should. The base is Piedmontese white wine — Moscato and Cortese among others — which is where the wine character and the gentle sweetness come from. Serve it cold over ice with a twist, or use it as the aromatic half of a cocktail. Keep it in the refrigerator once opened.
